Many ways to make delicious dishes using stale bread

“Give us this day, our daily bread,” – for centuries bread has been considered to be the staff of life.

Created quite accidentally, it is believed that bread was invented when early man realised that wheat could be crushed and made into a paste. Set over fire, it hardened and kept for several days. But it was the Egyptians, who discovered that when yeast was introduced  to the paste, they got leavened bread. Food historians believe that instead of waiting for fortuitous circumstances to leaven their bread, people found that they could save a piece of dough from an earlier batch of bread to put into the next day's dough. This was the origin of sourdough, a process still used today.

Over the years, bread has evolved into various forms and flavours. But there are times when we are left holding leftover bread. Here are a few innovative ways to use old bread.

INGREDIENTS

  • 6 cups bread sticks (cut from stale loaf)
  • 2 tbsp butter, melted
  • 5 tbsp sugar 
  • 1 tsp cinnamon 

METHOD

  1. Preheat oven to 180°C/350°F.
  2. Cut each bread slice into 4 strips.
  3. Place them in a large bowl. Drizzle some butter, tossing the bread crusts as you go to evenly distribute as best as possible.
  4. Sprinkle over 4 tbsp of sugar and cinnamon, and toss through. Spread out over 2 baking trays.
  5. Bake for 5 to 8 minutes until golden brown and crunchy.
  6. While hot, sprinkle over the remaining 1 tbsp of sugar.
